Chris Kohm's Veggie Pesto Pizza:
Ingredients: 6" Whole Wheat Pita Bread Pesto Paste Sun Dried Tomatoes Spinach Red Onions Feta Cheese Olives (optional) Pine Nuts (optional) Portabella Mushrooms (optional) Olive Oil Roma Tomatoes
Directions: Set Oven Temp to 350 degrees. Spread the Pesto Sauce onto the Pita Bread. Cut/chop the spinach, sun dried tomatoes, roma tomatoes, onions and olives into small pieces and scatter onto pita. Sprinkle olive oil and feta cheese onto top of the pitas and other ingredients.
Bake for 12-15 minutes or until Pita bread is crispy. Slice into 4's and serve warm.
Creation time 20 minutes.
Cayetana Maristela's Salvadoran Guacamole:
Ingredients: 1 medium size avocado, cut in cubes 2 hard boiled eggs, cut in cubes 1/4 c cilantro, minced 1/4 c red onion, minced 2 Tbsp lime juice salt and pepper to taste
Mix all ingredients.
